From grain to flour: an exclusive method combining experience and research.

From selecting the finest grains to quality controls, each batch is traced and tested with approximately 10 laboratory checks. Processing and stone grinding preserve nutrients and aromas, ensuring consistent performance and balanced doughs.

Grain Selection

We select various types of Italian, European and non-European grains, and each batch is inspected and traced with more than 70 laboratory tests per month, to ensure safety, uniformity, and consistent performance over time. Our 0,3% annual return rate confirms our reliability.

Thanks to an in-house laboratory spanning over 500 mq, a team of more than 20 expert technicians and an annual investment of approximately 2,5 million euros in research, we constantly monitor the quality, strength, extensibility, resistance, and tenacity of each flour. To ensure high standards, our technicians perform approximately 10 application tests per week for each type of flour.
